Almost a month and a half of spring already gone by, and I am still feeling as if it just started. The leaves on the trees are the only reminder of the season, which has been upto now wearier than winter, almost like a second fall. And maybe because of the moody weather, I rather crave to bake the kind of cake I would not this time of the year. Though this weekend looks as if our luck is about to change!

Ya pasó casi un mes y medio de primavera  y sigo sintiendo como si acabara de empezar. Las hojas de los árboles son el único recordatorio de la estación, que ha sido hasta ahora más gris que el invierno, casi como una segundo otoño. Y tal vez por este clima raro, prefiero hornear el tipo de torta que no haría en esta época del año. Aunque este fin de semana parece que la suerte está a punto de cambiar!


















This recipe is a variation of my favorite apple almond cake and is the perfect match for a cup of tea or coffee shared in good company. It almost has no wheat flour which I replaced with oat flour, for those seeking a healthier diet.

Esta receta es una variación de mi preferida torta de almendras y manzanas y es el acompañamiento perfecto para una taza de té o café compartida en buena compañía. Prácticamente no tiene harina de trigo que sustituí con harina de avena, para aquellos que están buscando una alimentación más saludable.

















I used a DIY oat flour with my regular all purpose flour. As I mentioned in my recipe for oat cinnamon sticky toffee buns it is as simple as grabbing the food processor and pulsing, transforming regular rolled oats into fine oat flour.

Usé una harina de avena hecha en casa. Como mencioné en mi receta para los bollos de avena y canela con salsa de caramelo, es tan simple como agarrar la procesadora de alimentos y pulsar, transformando los copos de avena comunes en harina de avena fina.



apple almond oat cake  (torta de almendras y manzanas con avena)

RECIPE/ RECETA 

Serves 8/ Porciones 8

Ingredients
1 1/2 cup ground almonds or almond meal
1/3 cup oat flour
2 tbsp all purpose flour
1 tbsp baking powder
3/4 cup granulated sugar
2 large eggs
1/3 cup acceptable vegetable oil
1 1/2 tsp vanilla extract
1/2 tsp almond extract (optional)
1/2 cup plain yoghurt
1 apple, peeled, cored and sliced ( I used Granny Smith)
1 tbsp almond flakes
1 tbsp granulated sugar

Icing sugar and ground cinnamon for dusting

Ingredientes
1 1/2 taza de almendras molidas o harina de almendra
1/3 taza de harina de avena
2 cucharadas de harina común "0000"
1 cucharada de polvo para hornear
3/4 taza de azúcar
2 huevos grandes
1/3 taza de aceite vegetal aceptable
1 1/2 cucharadita de extracto de vainilla
1/2 cucharadita de extracto de almendra (opcional)
1/2 taza de yogur natural
1 manzana, pelada, sin corazón y en rodajas (usé Granny Smith)
1 cucharada de almendras fileteadas
1 cucharada de azúcar granulada

Azúcar impalpable y canela en polvo para espolvorear


Instructions
  1. In a large bowl combine the ground almonds or almond meal, oat flour, all purpose flour and baking powder
  2. In another bowl beat the sugar with the eggs until pale and fluffy. Add the acceptable vegetable oil and mix.  Stir in the vanilla extract and almond extract if using
  3. Incorporate the dry ingredients to the wet batter and mix, add the plain yoghurt and combine
  4. Preheat the oven to 160 C / 320 F. Grease and line a 9" inch round baking tin
  5. Pour the batter, arrange the apple slices on top and sprinkle the almond flakes and tbsp of granulated sugar
  6. Bake for 30 to 35 minutes or until a skewer in the centre comes out clean and the cake is lightly golden
  7. Allow to cool on a rack
  8. For serving dust with icing sugar and ground cinnamon
Instrucciones
  1. En un bols grande, combinar la almendra molida o harina de almendra, harina de avena, harina común y el polvo de hornear
  2. En otro bols batir el azúcar con los huevos hasta que estén pálidos y esponjosos. Añadir el aceite vegetal y mezclar. Agregar el extracto de vainilla y el extracto de almendra, si se utiliza
  3. Incorporar los ingredientes secos a la masa húmeda y mezclar, añadir el yogur natural y combinar
  4. Precalentar el horno a 160 C / 320 F. Enmantecar y forrar un molde redondo de 23 cm de díametro
  5. Verter la mezcla, colocar los trozos de manzana en la parte superior y espolvorear las almendras fileteadas y la cucharada de azúcar granulada
  6. Hornear durante 30 a 35 minutos o hasta que un palillo en el centro salga limpio y la torta esté ligeramente dorada
  7. Dejar enfriar sobre una rejilla
  8. Para servir espolvorear con azúcar impalpable y canela molida

    1. Thank you Suzanne! Indeed, it has been a very long time. Though I keep reading my favourite blogs, as yours, and bake as well!! Haven´t got enough time this year though Im trying to keep it running.
