oat cinnamon sticky toffee buns












Making buns is always a challenge. As I have said in previous posts I am fond of yeasted doughs and find they are the best to bake. I prefer them over cakes and loaves and any other sweet treats. These buns are a little different though. I used a DIY oat flour with my regular all purpose flour. How did I manage? As simple as grabbing the food processor and pulsing, transforming regular rolled oats into fine oat flour.

Hacer bollos es siempre un desafío. Como ya he dicho en posts anteriores, las masas con levadura son las que más me gustan y para mí, son los mejores para hornear. Las prefiero más que a las tortas o budines u otros dulces. Estos bollos son un poco diferentes. Utilicé una harina de avena hecha en casa, mezclada con la harina común que siempre uso. ¿Cómo me las arreglé? Tan simple como agarrar la procesadora de alimentos y pulsar, transformando los copos de avena comunes en harina de avena fina.














The sticky toffee sauce is altogether a different subject. I have done caramel sauce before but this recipe is superb. I learned it from watching one of Mark Bittman's videos, cooking with pastry chef Claudia Fleming, though I adapted the measurements to my recipe needs.

La salsa de caramelo es un tema totalmente aparte. He hecho salsa de caramelo antes, pero esta receta es excelente. La aprendí de ver uno de los videos de Mark Bittman, cocinando con la chef de repostería Claudia Fleming, aunque adapté las medidas a la necesidad de mi receta.












Though adding the toffee sauce is not an everyday treat, the buns are a good choice for a special breakfast or coffee break. Special enough to start my children's deserved school winter holidays in a cozy way.

Aunque la adición de salsa de caramelo no es algo que se utiliza a diario, los bollos son una buena opción para un desayuno especial o junto a un café en el descanso de trabajo. Lo suficientemente especial para comenzar las merecidas vacaciones de invierno de la escuela de mis chicos de una manera acogedora.


oat cinnamon sticky toffee buns (bollos de avena y canela con salsa de caramelo)


RECIPE/ RECETA
Makes 8  big rolls / Para 8 rolls grandes

Ingredients
For the dough:
1 cup warm milk
1/2 cup unsalted butter, melted and at room temperature
1/3 cup granulated sugar
1 large egg, beaten
1/2 tsp salt
1 tsp vanilla extract
1 1/2 tsp granulated dry yeast
1/2 cup oat flour
3 cups all-purpose flour (plus 1/3 cup for kneading)

For the filling:
1/2 tsp ground cinnamon
1/4 cup brown sugar
2 oz / 60 g unsalted butter, melted

Sticky Toffee Sauce:
1/2 cup brown sugar
1/3 cup heavy cream
pinch of salt
1/2 tsp vanilla extract
1/4 cup unsalted butter, diced and cold

Ingredientes
Para la masa:
1 taza de leche caliente
1/2 taza de manteca, derretida y a temperatura ambiente
1/3 taza de azúcar
1 huevo grande, batido
1/2 cucharadita de sal
1 cucharadita de extracto de vainilla
1 1/2 cucharaditas de levadura seca granulada
1/2 taza de harina de avena
3 tazas de harina común "0000" (más 1/3 de taza para el amasado)

Para el relleno:
1/2 cucharadita de canela molida
1/4 taza de azúcar negra
2 oz / 60 g de manteca, derretida

Salsa toffee o de caramelo:
1/2 taza de azúcar negra
1/3 taza de crema de leche
pizca de sal
1/2 cucharadita de extracto de vainilla
1/4 taza de manteca, cortada en cubitos y fría


Instructions
  1. In a large bowl combine the warm milk, melted unsalted butter and granulated sugar. Stir in the yeast and let it sit until it is foamy, about 10 minutes. Stir in the beaten egg and vanilla extract and mix
  2. In another bowl combine the oat flour, all purpose flour and salt. Add the flour mixture to the wet mixture and work till you obtain a sticky dough but not to the fingers. Add 1/3 cup flour to knead the dough over a floured working surface for about 5 minutes. Allow to prove for 2 hours in a warm place
  3. Work the dough on a floured working surface with a rolling pin into a 10" x 14" rectangle, 1/2" inch tall
  4. For the filling: Combine the brown sugar and cinnamon in a small bowl. Spread the melted butter over the surface and sprinkle the cinnamon brown sugar on top
  5. Roll the rectangle up lengthwise into a long jellyroll. Slice it into 1 1/2" inch pieces
  6. Prepare a  9" inch round baking tin with vegetable oil spray. Place the rolls in the tin with a space between them. Allow to prove for 1 1/2 hours 
  7. Preheat the oven to 180º C / 350º F and bake for 30 minutes or until golden brown
  8. For the sticky toffee sauce: in a small saucepan pour the cream and add the brown sugar. Add the salt and vanilla extract and stir to combine. Cook on medium heat until it simmers. Turn the heat off and add the unsalted butter cubes and whisk to combine. Pour freely over your warm bun and enjoy!


Instrucciones

  1. En un bols grande, combinar la leche tibia, manteca derretida y el azúcar. Añadir la levadura y dejar reposar hasta que esté espumosa, aproximadamente 10 minutos. Agregar el huevo batido y el extracto de vainilla y mezclar
  2. En otro bols mezclar la harina de avena, harina común y la sal. Añadir la mezcla de harina a la mezcla húmeda y trabajar hasta obtener una masa pegajosa, pero no a los dedos. Añadir 1/3 taza de harina para amasar sobre una superficie de trabajo enharinada durante unos 5 minutos. Permitir que leude durante 2 horas en un lugar cálido
  3. Trabajar la masa sobre una superficie enharinada con un rodillo formando un rectángulo de 25 cm x 35 cm de 1 cm de altura
  4. Para el relleno: mezclar el azúcar negra y la canela en un tazón pequeño. Pintar la superficie con la manteca derretida y espolvorear el azúcar negra con canela en la parte superior
  5. Enrollar el rectángulo a lo largo. Cortar en pedazos de 4,5 cm aproximadamente
  6. Preparar un molde redondo de 23 cm de diámetro con aceite vegetal en aerosol. Colocar los rollos en el molde con un espacio entre ellos. Permitir que leude por 1 1/2 horas
  7. Precalentar el horno a 180º C / 350º F y hornear por 30 minutos o hasta que estén doradas
  8. Para la salsa de caramelo: en una cacerola pequeña verter la crema y añadir el azúcar negra. Agregar el extracto de vainilla y la sal y revolver para mezclar. Cocinar a fuego medio hasta que rompa el hervor. Apagar el fuego y agregar los cubos de manteca y batir para emulsionar. Verter libremente sobre los bollos tibios y disfrutar!

  3. La cantidad de cosas que hacés con levadura Viviana, buenísimas todas! Yo hace un año que no toco la kitchen air por el poco espacio que tengo en mi cocina; ya volverá a tener protagonismo. La harina de avena me encanta también, aunque a veces me humedece demasiado la masa. Salieron divinos estos rolls! El caramelo no falla NUNCA.
