cardamom cream loaf + second blogversary


It is amazing how time flies! I can hardly believe I have been doing this foodblogging "thing" for  two years already. My greatest joy is sharing with all those who care to read my recipes and bring happiness to their tables through them.
This small nook on the web has given me some beautiful friends and acquainted me with a lot of worthy people around the globe. Though I am not posting much, I shall try to keep it up, because it is just wonderful being around!!
I am leaving below the kind of recipe I enjoy most: quick, simple, for our everyday delight, to enjoy with family and friends.


Es increíble cómo pasa el tiempo! Apenas puedo creer que estuve haciendo esta "cosa" del foodblogging por dos años ya. Mi mayor alegría es compartir con todos aquellos que se preocupan por leer mis recetas y traer felicidad a sus mesas a través de ellas.
Este pequeño rincón en la web me ha dado hermosas amigas y me contactó con una gran cantidad de personas geniales por todo el mundo. Aunque no estoy publicando mucho, voy a tratar de hacerlo cuanto pueda, porque es simplemente maravilloso estar acá!!
Dejo a continuación el tipo de receta que más me gusta: rápida, simple, para nuestro deleite cotidiano, para disfrutar junto a la familia y amigos.



cardamom cream loaf (budín de crema al cardamomo)

RECIPE/ RECETA
Makes 1 4" x 10"inch loaf / Para 1 budín de 10 x 25 cm 

Ingredients
3/4 cup granulated sugar
4 oz / 115g unsalted butter, room temperature
2 eggs
1 1/2 cup self raising flour, sifted
1/2 cup cream
2 tbsp whole milk
1 tsp ground cardamom (you can grind your own from 5 to 6 pods)
1/2 tsp vanilla extract

Ingredientes
3/4 taza de azúcar granulada
4 oz / 115 g de manteca, a temperatura ambiente
2 huevos
1 1/2 taza de harina leudante, tamizada
1/2 taza de crema
2 cucharadas de leche entera
1 cucharadita de cardamomo molido (pueden moler 5 a 6 vainas)
1/2 cucharadita de extracto de vainilla


Instructions
  1. Preheat oven to 160 º C / 325 ° F. Grease and line a 2 1/2 " deep, 4" x 10" inch (base) loaf  baking tin. Allow the lining to hang over 1" on the long sides of the tin
  2. Sift the flour into a bowl
  3. In a small saucepan mix the cream, milk and ground cardamom. Cook on medium heat until it simmers. Allow to cool
  4. In another bowl cream the sugar with the unsalted butter, add the eggs one by one and beat until pale and fluffy. Add the vanilla extract. 
  5. Fold the flour into the batter, alternate with the cardamom cream until they are well combined. Pour into the prepared tin 
  6. Bake for 1 hour or until a skewer inserted in the centre comes out clean. Allow to stand for 10 minutes and unmold on a rack to cool.
  7.  Enjoy with a cup of tea or coffee! It is great with fresh berries and mango cubes for breakfast
Instrucciones
  1. Precalentar el horno a 160 º C / 325 ° F. Enmantecar y forrar un molde de 6.5 cm de profundidad y 10 cm x 25 cm  de base. Permitir que el papel manteca cuelgue 2 cm en los lados largos del molde
  2. Tamizar la harina en un bols
  3. En una cacerola pequeña mezclar la crema, la leche y el cardamomo molido. Cocinar a fuego medio hasta que rompa el hervor. Dejar que se enfríe
  4. En otro bols batir el azúcar con la manteca, añadir los huevos uno a uno y batir hasta que la mezcla esté pálida y esponjosa. Agregar el extracto de vainilla.
  5. Incorporar la harina en la masa, alternando con la crema de cardamomo hasta que esté bien combinado. Verter en el molde preparado
  6. Hornear durante 1 hora o hasta que un palillo insertado en el centro salga limpio. Dejar reposar durante 10 minutos y desmoldar sobre una rejilla para enfriar.
  7. Disfrutar con una taza de té o café! Es genial con bayas frescas y cubos de mango para el desayuno

  1. Congratulations on the 2 year anniversary, here's to many more. Love your loaf, I also am so fond of simple recipes like that, I can almost smell the fragrant cardamom and the crumb is just perfect. It looks delicious with that beautiful fruit.

  2. El cardamomo es una de mis especias preferidas. Que buen budín Vivi! Es un mundo increíble esto de ser blogger no? Yo no dejo de asombrarme. Otra cosa: donde conseguiste ese papel manteca marroncito?? Siempre lo quise y nunca lo encontré!

    1. Para mí también el cardamomo es re- especial!! Y si, es re loco esto de ser blogger, foodblogger...te debe pasar que los que no están en esto te miran y no entienden, o no?? Jajaj! El papel manteca también es reciclado! Creo que acá no hay marroncito. Yo agarro todas las bolsitas de ponele Starbucks, por ejemplo, les saco las miguitas, las abro prolijamente y las aplasto bien y apilo... y las voy usando... En este país nos dejaron sin muchas cosas, pero nos sobra el ingenio!!!! Te mando un beso por el día del amigo!

    3. No sabes como estoy tan fèliz de conocer gentes que como yo le gustan tanto cardamom, el mejor de los especias segun yo. Gracias para esta receta Viviana
