kanelbullar - swedish cinnamon buns

I had this kanelbullar recipe in my "to do" list of bakes and as it has been a while I don´t post, I found these traditional cinnamon Swedish buns as a great treat to share. This has been a very busy month and there are some news I wish to write about in following posts related to my activity as a freelance food writer.

For now, I want to share some special things I learned while searching for data to bake this fabulous recipe. While making common cinnamon rolls implies rolling your pastry into a jelly roll lengthwise and cutting it into pieces, kanelbullar are rolled in a different way. Also, to make them look prettier some pearl sugar is sprinkled over them after brushing them with abundant egg wash. As I could not get any pearl sugar I found a way to do it at home!

Por ahora, quiero compartir algunas cosas especiales que aprendí durante la búsqueda de datos para hornear esta fabulosa receta. Mientras que hacer bollos de canela comunes implica rodar la masa en un rollo a lo largo y cortarlo en pedazos, el kanelbullar  se enrolla de una manera diferente. Además, para que se vean mejor se espolvorean con un poco de granela después de pintarlos con abundante huevo batido. Como no pude conseguir azúcar granela encontré una manera de hacerla en casa!

RECIPE/ RECETA
Makes 18 buns/ Para 18 bollos 

Ingredients
For the dough:
3/4 cup warm milk
1/2 cup unsalted butter, melted
1/3 cup granulated sugar
1 large egg, beaten
1 tsp ground cardamom from 10 pods, crushed 
1/2 tsp salt
1 1/2 tbsp granulated active dry yeast
3 cups all-purpose flour 

For the filling:
2 oz unsalted butter, soft
2 tsp ground cinnamon
4 tbsp light brown sugar
pinch of fine salt

Egg wash
2 tbsp homemade pearl sugar

Ingredientes
Para la masa:
3/4 taza de leche tibia
1/2 taza de manteca, derretida
1/3 taza de azúcar
1 huevo grande, batido
1 cucharadita de té de cardamomo molido de 10 vainas, trituradas
1/2 cucharadita de sal
1 1/2 cucharada sopera de levadura seca granulada
3 tazas de harina común "0000"

Para el relleno:
2 oz/ 100 g de manteca, pomada
2 cucharaditas de té de canela en polvo
4 cucharadas soperas de azúcar rubia
1 pizca de sal

Huevo batido
2 cucharadas de azúcar granela casera




Instructions
  1. In a large bowl combine the warm milk, melted butter and granulated sugar. Stir in the yeast and let it sit until it is foamy, about 10 minutes. Stir in the beaten egg and mix
  2. Combine the flour, salt and ground cardamom. Add the flour mix to the wet mixture and work till you obtain a sticky dough but not to the fingers. Knead the dough over a floured working surface for about 5 minutes. Allow to prove for 1 1/2 hours in a warm place
  3. For the filling mix, combine the light brown sugar, the cinnamon and pinch of salt  
  4. Divide the dough into 2 pieces. Work each dough on a floured working surface with a rolling pin into a 18" x 12" inch rectangle, 1/4" inch tall 
  5. Spread the soft butter over the surface. Sprinkle the filling mix evenly  
  6. Fold each rectangle in thirds lengthwise into a long jellyroll and flatten it with your hands. Slice it into 2" inch pieces. Cut each piece in the middle lengthwise leaving one end attached. Twist each loose end and braid into a bun. 
  7. Grease and line 2 baking tins. Place the rolls in each tin with a space between them (about 9 rolls per tin) and allow to rise for 30 minutes in a warm place
  8. Brush each bun abundantly with egg wash and sprinkle with pearl sugar*
  9. Preheat oven to 220º C/ 428º F and bake for 12 to 15 minutes
  10. They are best eaten warm the same day with your favourite cup of coffee

To make your own: In a small saucepan, over very low fire combine 3/4 cup granulated sugar with 1 tbsp water. Stir until you can see no more loose sugar and lumps or clusters start forming. Allow to cool completely and break carefully into small pieces. Keep in an airtight container in a dry place.


Instrucciones

  1. En un bols grande, combinar la leche tibia, la manteca derretida y el azúcar. Agregar la levadura y dejar reposar hasta que esté espumosa, aproximadamente 10 minutos. Agregar el huevo batido y mezclar
  2. Combinar la harina, la sal y el cardamomo molido. Añadir la mezcla de harina a la mezcla húmeda y trabajar hasta obtener una masa pegajosa, pero no a los dedos. Amasar sobre una superficie de trabajo enharinada durante unos 5 minutos. Permitir que leude por 1 1/2 horas en un lugar cálido
  3. Para la mezcla de relleno, combinar el azúcar rubia, la canela y la pizca de sal
  4. Dividir la masa en 2 piezas. Trabajar cada masa sobre una superficie de trabajo enharinada con un rodillo hasta obtener un rectángulo de 30 cm x 45 cm, y 1/4 " pulgada de altura
  5. Extender la manteca pomada sobre la superficie. Espolvorear la mezcla de relleno de manera uniforme
  6. Doblar cada rectángulo en tres partes a lo largo en un rollo y aplanar con las manos. Cortar en trozos de 5 cm. Cortar cada pedazo en el centro a lo largo dejando una punta unida. Torcer cada punta suelta y trenzar el bollo.
  7. Enmantecar y forrar 2 placas de horno. Colocar los bollos en cada placa con un espacio entre ellos (alrededor de 9 rollos por placa) y dejar leudar durante 30 minutos en un lugar cálido
  8. Pintar cada bollo abundantemente con huevo batido y espolvorear con azúcar granela*
  9. Precalentar el horno a 220 º C / 428 º F y hornear durante 12 a 15 minutos
  10. Se comen mejor tibios ese mismo día con su taza de café preferida

Para hacer casera: En una cacerola pequeña, a fuego muy bajo combinar 3/4 taza de azúcar granulada con 1 cucharada de agua. Revolver hasta que no se pueda ver más azúcar suelta y se empiecen a ver grumos o terrones. Dejar enfriar completamente y romper cuidadosamente en trozos pequeños. Mantener en un recipiente hermético en lugar seco.

  6. Pase de no escuchar hablar de estos rolls a verlos en tres blogs distintos en los ultimos tiempos... ya tengo que hacerlos como te imaginaras! Amo toda la panaderia escandinava, debe ser por el cardamomo. Que buena onda lo de asoc francesa Viviana! Felicitaciones!

    1. Hola Paula! me pasó lo mismo y dije...hay que hacerlos! Son lo más! Hay un video de una pareja de gente mayor sueca, que los hacen para sus nietos cuando los visitan, que me conmovió mucho y creo que eso también tuvo algo que ver con el posteo. Gracias por la felicitación, está bueno!!
