magic cake lemon bars


Have you ever craved for a special flavor? Lately I am in a "citrus mood". And not because I am a great fan. Just that I want to include citrics, specially lemons, in whatever I bake. I wanted to bake some lemon bars, but I did not want all the fuzz about doing the crust, the curd... and whatever comes on top! As always, or most of the times, I wanted to keep it simple. And if possible, quick. We still have a terrible hot weather down here, while most of you up North must be freezing, and it is rather not recommendable to be in the kitchen longer than necessary.

¿Alguna vez se les ha antojado algún sabor especial? Últimamente estoy en "estado cítrico". Y no porque sea una gran admiradora. Sólo que quiero incluir cítricos, especialmente limones, en todo lo que horneo. Quería hornear unas barras de limón pero no entrar en la complicación de hacer la masa, la crema...y lo que sea que va arriba! Como siempre, o la mayoría de las veces, quería que fuera simple. Y de ser posible, rápido. Tenemos un clima terriblemente caluroso aquí, mientras muchos de ustedes en el Norte deben estar congelándose de frío, y más bien, no es nada recomendable estar en la cocina más de lo necesario.





I have an old  friend from school, who once prepared a delicious vanilla cake, that had a peculiar characteristic. It was part cake, part custard. I remember her telling me, her mouth watering, how good it was. We are both the type of person that loves custard, creme caramel or flan and obviously lemon curd. She told me how she had done it, but never formally handed me the recipe and at the time, I did not bother to write it down as we spoke.

Tengo una vieja amiga del colegio, que una vez preparó una deliciosa torta de vainilla, que tenía una característica peculiar. Recuerdo como ella me contaba, haciéndosele agua la boca, lo buena que era. Somos las dos del tipo de persona que ama las cremas, el creme caramel o flan y obviamente la crema de limón. Me dijo como la había hecho, pero nunca me dio la receta formalmente y en el momento, yo no me preocupé por escribirla mientras hablábamos.

Recently I saw a video about " prajitura desteapta" (Romanian for " intelligent cake") and I realized that it was my friend´s marvelous cake! I started searching for more information on the web and found out that many foodbloggers love it too! There is an Argentine foodblogger lady, Mabel, living in Spain, whose post on it went viral! I saw it in other blogs, too, and all of them re-named it "magic cake". And it sure is. You just have to mix up only one batter and when the cake comes out of the oven you get a thin crust on the bottom, a mid layer of delicious custard and a top thin layer of spongy cake. Want to work the miracle?

Recientemente vi un video sobre "prajitura desteapta" (" torta inteligente" en rumano) y me di cuenta de que era la maravillosa torta de mi amiga! Comencé a buscar más información en la web y encontré que hay muchas foodbloggers  a las que también les encanta!  Hay una foodblogger argentina, Mabelque vive en España, cuyo post sobre esta torta se viralizó! La vi en otros blogs también y todos la han rebautizado como "torta mágica". Y así es. Solamente hay que hacer una mezcla y cuando sale del horno se obtiene una masa finita abajo, una capa media de deliciosa crema y otra superior de esponjosa torta. ¿Quieren hacer el milagro?


I thought it would work perfectly for the lemon bars I was craving for, so I adapted the recipe slightly to get my "citrus mood " satisfied!

Pensé que iba a funcionar perfectamente para las barras de limón que estaba deseando así que adapté la receta un poco para que pudiera tener mi "estado cítrico" satisfecho!


"magic cake" lemon bars ( barras de limón de "torta magica")

RECIPE/ RECETA
Makes 9 bars/ Para 9 porciones 

Ingredients
4 eggs, separated
3/ 4 cup / 150 g sugar
1 lemon, juice and zest
1/2 cup / 112 g unsalted butter, melted and  at room temperature
1 cup/ 115 g plain flour
2 cups / 400 ml milk, warm
pinch of salt
1/2 tsp cream of tartar (optional)
Icing sugar

Ingredientes
4 huevos, separados
150 g de azúcar
1 limón, jugo y ralladura
112 g de manteca, derretida y a temperatura ambiente
115 g de harina común "0000"
400 ml de leche, tibia
pizca de sal
1/2 cucharadita de té de cremor tártaro (opcional)
Azúcar impalpable


Instructions

  1. Beat the egg yolks with the sugar with an electric hand mixer (you could use a standing mixer for the whole process if you wish) until pale and fluffy
  2. Add the lemon zest and the lemon juice and continue beating
  3. Add the melted unsalted butter 
  4. Once everything is combined add the flour in three times and go on mixing
  5. Add the warm milk to the mixture, you will obtain a rather liquid batter
  6. In a separate bowl whisk the egg whites with a pinch of salt and ( optionally) 1/2 tsp cream of tartar until stiff. (I did not use the cream of tartar but it stabilizes the egg whites and you might want to be sure they stay stiff!)
  7. Spoon the egg whites into the batter and fold gently
  8. Grease and flour a 20 cm x 20 cm ( 8" x 8" inch) baking tin and pour the batter
  9. Preheat oven to 160 C (325 F) and bake for 1 hour
  10. Allow to cool completely and unmold very carefully 
  11. Cut into 2 1/2"x 2 1/2" inch bars and sprinkle with icing sugar
Instrucciones
  1. Batir las yemas con el azúcar con un batidor eléctrico de mano hasta que estén pálidas y esponjosas (pueden usar una batidora de pie para todo el proceso si lo desean)
  2. Añadir la ralladura y el jugo de limón y seguir batiendo
  3. Añadir la manteca derretida y continuar el batido
  4. Cuando todo esté combinado añadir la harina en tres partes y mezclar
  5. Añadir la leche tibia y mezclar, obtendrán una mezcla bastante líquida
  6. Batir las claras a nieve con una pizca de sal y 1/2 cucharadita de té de cremor tártaro (opcional) Yo no utilicé cremor tártaro, pero pueden hacerlo si quieren asegurarse de que las claras no se bajen, pues las estabiliza!
  7. Añadir las claras a la mezcla previa por cucharadas en forma envolvente
  8. Enmantecar y enharinar un molde de 20 cm x 20 cm y volcar la preparación
  9. Precalentar el horno a 160 C (325 F) y cocinar por 1 hora
  10. Dejar enfriar por completo y desmoldar con cuidado
  11. Cortar en cuadrados de 6.5 cm x 6.5 cm y espolvorear con azúcar impalpable

  3. Yo hacía el lemon pudding que se separa, pero esta torta tiene masa abajo! Eso me intriga! La voy a probar en cuanto prenda el horno, que por ahora está de vacaciones hasta que pase el calor... Que blog es el de Mabel?

    1. Si parece pudding pero las proporciones son diferentes. Queda una masa muy finita abajo. Creo que el blog se llama "pasteles de colores", pero yo la receta la vi en un video en youtube de Jamila Cuisine. (está en rumano pero el paso a paso esta muy bien explicado) Podés creer que alguien me reportó las poblicaciones por este post en g+ y no puedo publicar nada?? No entiendo que habré hecho mal, tengo poca experiencia en esto!!

  4. Oh my this is wonderful. It looks incredible. I too love citrus and have some meyer lemons I need to use. I love this magic cake I don't know how it does what it does but it really looks amazing. Thank you for posting this. Saved onto evernote to make very soon.

  5. Suzanne, how lucky you are to have those Meyer lemons! They are ideal for this recipe. I did not specify the type of lemons because many people cant get them around their area.
