broccoli galette



There is a green wave in my kitchen. It is as if  I wanted to retain all the green of the season in my dishes. I already cooked spinach and zucchinis, though these last are out of season but still, deeply green. I steamed tons of brussels sprouts and chard, though not for the blog and yet so green, too. I grilled cauliflower, though not green and yet so yummy with turkish spice "sumac". It is now mr. broccolis time to perform, and I will love to see it crunchy and tasty, wrapped in a pastry I adapted for this recipe, with walnuts and a creamy and soft good old bechamel sauce.

Hay una onda verde en mi cocina. Como si quisiera retener todo el verde de la estación en mis platos. Ya hice espinacas y zucchinis, aunque estos últimos no son de estación, pero son bien verdes. Cociné al vapor toneladas de repollitos de bruselas y de acelga, aunque no para el blog, y aún así tan verdes. Grillé coliflor con sumac (una especia turca), que no son verdes, ¡pero son tan ricos! Ahora le toca actuar al Sr Brócoli  y voy a presentarlo muy crujiente envuelto en una masa que adapté para esta ocasión acompañado por nueces y la cremosa y suave salsa bechamel de siempre.


Broccoli  (brassica oleracea italica) is from the sprouts family, and it grows well with low temperatures. Cabbages, brussels sprouts, cauliflower (very similar to it except for its colour) are from the same vegetable kind. It is a very important source of vitamins  C and E and soluble food fiber. The fleshy floral heads are mostly used, arranged in the manner of a tree rising from a stem that is also edible. The best way of cooking it is by steaming or grilling so that none of its fabulous nutrients may be lost in the process.

El brócoli (brassica oleracea italica) es de la familia de las coles y su cultivo funciona muy bien con poca temperatura. El repollo, los repollitos de bruselas, el coliflor (al que se asemeja idénticamente salvo por el color) son del mismo tipo de verduras . Es una fuente importante de vitamina C y E y fibra alimentaria soluble. Se utilizan mayormente las cabezas carnosas florales, dispuestas en forma de árbol que nacen de un tallo también comestible. La mejor cocción se realiza al vapor o grillada para no restarle ninguno de sus fabulosos nutrientes.



A "galette" is a French cuisine term to designate a crusty, round and flat type of cake from the northwestern region of Brittany. It is filled mainly with salty ingredients, but it is also baked as a sweet treat.

Una "galette" es una especialidad gastronómica de Francia de la región noroeste de Bretania. Se trata de una masa rústica, redonda  y chata que se rellena mayormente con ingredientes salados, pero también se hornean dulces.

RECIPE/ RECETA
 Serves 6 / Porciones 6


Ingredients
For the pastry:
1 cup plus 1 tbsp all-purpose flour
1/2 cup whole wheat flour
1/2 teaspoon salt
8 tbsp unsalted butter, cold and diced
6 tbsp very cold water

For the filling:
1 1/2 small broccoli plant
3 garlic cloves, thinly sliced
2 tbsp extra virgin olive oil
1/2 cup walnuts coarsely chopped
1 cup bechamel sauce*
2 tbsp  grated parmesan cheese

*For the bechamel sauce:
1 cup milk
1 tbsp unsalted butter
2 tbsp plain flour
1/2 teaspoon ground nutmeg
 sal and pepper

Ingredientes
Para la masa:
1 taza más una cucharada sopera de harina común "0000"
1/2 taza de harina de trigo integral fina
1/2 cucharadita de té de sal 
8 cucharadas soperas de manteca fría en pedacitos
6 cucharadas soperas de agua helada

Para el relleno:
11/2 planta de brócoli chica
3 dientes de ajo, en rodajas finas
2 cucharadas soperas de aceite de oliva extra virgen
1/2 taza de nueces picadas gruesas
1 taza de salsa blanca*
2 cucharadas de queso parmesano rallado 

*Para la salsa blanca:
1 taza de leche
1 cucharada sopera de manteca
2 cucharadas soperas de harina común
1/2 cucharadita de té de nuez moscada rallada
sal y pimienta



Instructions
For the pastry:
  1. Sieve the all-purpose flour and the whole wheat flour in a bowl and add the salt. Combine well
  2. Make a well in the middle and add the unsalted butter, cold and diced. Work with the tip of your fingers until you obtain crumbs
  3. Add the cold water and form a ball
  4. Refrigerate for 20 minutes
For the filling:
  1. Separate the broccoli florets from the stem. Roast them in a hot oven for 20 minutes on a tray lined with parchment paper
  2. Heat the olive oil in a pan and add the thinly sliced garlic cloves to perfume. Add the broccoli and sauté to impregnate the oil and the garlic
  3. In a separate pan make a "roux" with 1 tbsp unsalted butter and  2 tbsp plain flour. Add the milk and beat vigorously to prevent lumps from forming. Let it thicken. Add salt, pepper and 1/2 teespoon ground nutmeg
To assemble:
  1. Take the pastry fron the refrigerator and flatten it on a dusted working top, until it is 3 to 4 mm tall and 35 cm round
  2. Arrange the broccoli florets and the garlic in the middle, leaving 5 cm free from the border
  3. Sprinkle the coarsely chopped walnuts
  4. Drizzle the thickened bechamel sauce and top with 2 tbsp grated parmesan cheese
  5. Fold the edges of the pastry towards the centre
  6. Preheat oven to 220 C and bake for 30 minutes or until the pastry is slightly golden 

Instrucciones
Para la masa:

  1. Cernir  en un bols la harina común con la harina integral y añadir la sal. Mezclar bien
  2. Hacer un hueco en el centro y colocar la manteca fría en trozos y trabajar con la punta de los dedos hasta obtener un granulado
  3. Añadir las cucharadas de agua helada y lograr un bollo homogéneo
  4. Llevar a la heladera 20 minutos
Para el relleno:
  1. Desgajar los brócolis y separar las flores del tallo. Colocarlas en una placa para horno con papel manteca y asarlas a fuego fuerte por 20 minutos aproximadamente
  2. Una vez listos retirar del horno y reservar
  3. Calentar las 2 cucharadas de aceite de oliva en una cacerola y echar los ajos en rodajas finas y perfumar el aceite. Añadir los brócolis y saltear levemente impregnándolos con el aceite y el ajo. 
  4. En una cacerola aparte realizar una salsa blanca con una cucharada de manteca y dos cucharadas de harina. Hacer un "roux" y echar una taza de leche batiendo enérgicamente para no formar grumos. Espesar. Salpimentar y añadir 1/2 cucharadita de té de nuez moscada rallada.
Armado:


  1. Sacar la masa de la heladera y sobre la mesada enharinada estirar con palote hasta lograr 3 a 4 mm de espesor y una circunferencia de 35 cm
  2. En el centro, dejando un borde de 5 cm acomodar los brócolis con los ajos
  3. Espolvorear la 1/2 taza de nueces picadas
  4. Salpicar los brócolis con la salsa blanca y espolvorear el queso parmesano rallado
  5. Doblar la masa de los bordes con un repulgue rústico
  6. Llevar a horno precalentado a 220 C por 30 minutos o hasta que la masa esté levemente dorada
