panettone -no yeast-

Early in December I had read this genius recipe from Mario Batali and I was eager to give it a try. Mainly because I was wondering how it would turn out since it has no yeast and because it is just as I love things: straightforward and simple. I firmly believe that "less is more" and this recipe confirms one of the principles I follow, not only at work, but also in the kitchen. (Though you should know that many say that "less is boring"... You choose!)

A principio de diciembre había leído esta genial receta de Mario Batali y estaba ansiosa por probarla. Principalmente porque me preguntaba como resultaría, ya que no contiene levadura, y porque es justamente como amo las cosas: sin complicaciones y simples. Creo firmemente que "menos es más" y esta receta confirma este principio que aplico, no solo en mi trabajo, sino también en la cocina. (Aunque deberían saber que muchos afirman que "menos es aburrido"... ustedes elijan!)
There are few days left before Christmas so I thought it was the right time to start baking my panettone. There is a strong Italian influence in the country and panettone is a must for the holidays. These past days have been terribly hot. Temperatures have risen above 30º C (i.e. above 86º F) and it is not easy to get into the kitchen and bake, so as I predicted, this recipe was not only my right choice for its handiness, but also because it barely took time!

Faltan pocos días para Navidad, por lo que consideré que era el momento justo para hacer mi "panettone" (pan dulce). En el país hay una influencia italiana muy fuerte y el "panettone" es un infaltable en la mesa navideña. Estos días pasados han sido muy calurosos. Las temperaturas estuvieron por encima de los 30º C (eso es más de 86º F) y no es fácil meterse en la cocina y hornear, así que, tal como lo había predicho, esta receta no fue solamente mi elección correcta por ser tan manejable sino también porque casi no llevó tiempo hacerla!

This past winter I baked a variety of cakes in square and rectangular baking tins, to cut into small bites and always have at hand with a cup of coffee or tea. I had posted these recipes directly on my FACEBOOK page and thought it would be a good idea to save them in a post on the blog. I was tempted by the apples, pears and prunes, and spices such as ginger and cinnamon, that combined with a touch of honey, scented all the house as I baked them. Let's enjoy them!

Este invierno pasado hice una variedad de tortas en moldes cuadrados o rectangulares para cortar en porciones y tener siempre a mano con una taza de café o un té. Había posteado estas recetas directamente en mi página de FACEBOOK y pensé que sería una buena idea ponerlas en el blog para no perderlas. Me tentaron las manzanas, peras y ciruelas desecadas y especias como el jengibre y la canela, que combinadas con un toque de miel, perfumaron toda la casa al cocinarlas. ¡Vamos a disfrutarlas!

How do you get ready for Christmas? It has become a family tradition, since my kids were born, to start decorating the house and setting up the tree for Christmas the first weekend of December. This time, we sweetened our busy afternoons with a delicious tea and these recipes.

Did you realize how close we are to Christmas? Which are the flavours that remind you it is near? Dried fruits and nuts remind me of this time and take me directly to my childhood. This time of the year, so close to Christmas, brings indelible memories of that time. One of the things I most remember are dried figs. My grandfather Misak, who spent part of his own childhood in Smirna (Izmir), used to prepare for my brother, my cousin and me, dried figs, halved and stuffed with walnuts. It was a feast within the feast! At least for me, because I really don't know wether the other two children devoured them as I did, or not. I loved those Turkish dried figs and to me, they just simply meant Christmas and my grandfather...and all his amazing stories in Anatolian land.

¿Se dieron cuenta de lo poco que falta para Navidad? ¿Qué sabores les hace acordar que está cerca? A mí, las frutas secas y las nueces me traen memorias de esta época y me llevan directamente a la niñez. Esta parte del año, tan cerca de Navidad, me trae recuerdos imborrables de mi infancia. Una de las cosas que más recuerdo son los higos secos. Mi abuelo Misak, que pasó parte de su propia infancia en Esmirna ( Izmir), nos preparaba, a mi hermano, a mi prima y a mí, higos secos cortados a la mitad y rellenos con nueces. ¡Era toda una fiesta dentro de la fiesta! Por lo menos para mí, porque realmente no sé si los otros dos niños se los devoraban como yo o no. Amaba esos higos turcos secos y para mí representaban simplemente eso: Navidad y mi abuelo... y todas sus increíbles historias en tierra de Anatolia.






The great advantage about dried figs, as well as other dried fruits, is that we can have them for Christmas and New Year Eve's Holidays. Figs are a late summer fruit and as such, those living in the Northern Hemisphere already delighted themselves with their sweet, juicy and seedy taste and those of us down South will have to wait till late February for their matchless scent and flavour. Around the end of summer I love to collect some from the fig tree in my parents' house, that yields loads of Spanish figs (before the birds pick their fleshy inside!), to make a favourite Greek fig paste recipe I love to serve with fresh bread and homemade ricotta cheese.

La gran ventaja de los higos secos, y de las otras frutas secas, es que podemos usarlas en las fiestas de Navidad y Año Nuevo. El higo es una fruta tardía del verano y como tal, los que viven en el hemisferio norte ya se deleitaron con su gusto dulce, jugoso y semillado y aquellos de nosotros en el sur, tendremos que esperar hasta fin de Febrero por su incomparable aroma y sabor. Alrededor del fin del verano me encanta recolectar algunos higos del árbol de la casa de mis padres, que da cantidad de higos españoles (¡antes de que los pájaros picoteen su pulpa carnosa!), para hacer una receta griega favorita de pasta de higos, que me encanta servir para acompañar con pan fresco y ricota casera.

I had these gorgeous dried Turkish figs and I inspired myself in THIS recipe from Ottolenghi´s blog. Just read it. It is absolutely amazing. The cake reminded me of my apple almond cake because it has ground almonds and greek yoghurt, yet the main difference is that he uses butter creamed with  sugar, which makes it richer, while I use vegetable oil (as I usually do in my cakes) to get a leaner cake. And of course, those fresh figs from summer, so exuberant and luscious.
I had to do something with mine to make them look a bit like them. So I coated them in a sweet and sticky caramel sauce, that once again reminded me of my childhood. As a child, I remember my parents buying for my brother and me caramel dried figs on a stick, covered with sweet popcorn stuck all around them, from an elderly man who had a cart full of  this delicious booty and sold them on the street. 

Tenía estos maravillosos higos turcos secos y me inspiré en ESTA receta del blog de Ottolenghi. Sólo léanlo. Es absolutamente increíble. La torta me recordó a mi torta de manzanas y almendras porque tiene almendras molidas y yoghurt griego, pero la gran diferencia es que él usa la manteca batida con el azúcar, lo que la enriquece más, mientras que yo utilizo aceite vegetal (como usualmente hago en mis tortas) para obtener una torta más ligera. Y por supuesto, esos higos frescos del verano, tan exuberantes y deliciosos. 
Yo tenía que hacer algo con los míos para que se les parecieran un poco. Los bañé con una capa de salsa de caramelo, dulce y pegajosa, y una vez más recordé mi niñez. De chica, recuerdo a mis padres comprando para mi hermano y para mí, higos secos acaramelados en un palito, recubiertos con pochoclo dulce, de un señor mayor que, desde un carrito lleno de este delicioso botín, los vendía en la calle.

Thanks to all the preparations for Thanksgiving Day and Hanukkah, which practically coincide this year, these last weeks I have been reading dozens of pie recipes. It is impossible to choose only one! But each of us has its own favourite ingredients, and though the one I made for today is not festive, it reflects a blend of flavours very near to what I consider is a perfect combination. What do you think?

Estas últimas semanas, gracias a todos los preparativos para el Día de Acción de Gracias y Hannukah, que este año prácticamente coinciden, estuve leyendo decenas de recetas de tartas. ¡Es imposible elegir una sola! Pero cada uno tiene sus ingredientes favoritos y si bien esta que hice hoy no es festiva, refleja una mezcla de sabores muy cercanos, a lo que para mí, es una perfecta combinación. ¿Qué opinan ustedes?








I chose an assortment of onions to match with white mushrooms, portobellos and dry porcinis soaked in white wine. These were sauteed and flavoured with rosemary. You can choose not to use rosemary and just season the vegetables with salt and fresh ground black pepper, or use another herb of your choice instead.

Elegí una variedad de cebollas para combinar con champignones, portobellos y porcinis secos que remojé en vino blanco. Los salteé y aromaticé con romero. Pueden elegir no usar romero y solo salpimentar los vegetales con sal y pimienta negra en granos, o usar alguna otra hierba a elección.































I chose a ricotta shortcrust for the pie crust I had already used for the spicy butternut squash curry tartines I had done during the winter, when I started blogging. Ricotta cheese provides an incredible smoothness to the crust and makes it really tender.

Elegí un shortcrust de ricota para la masa de la tarta, que ya había usado para las especiadas tartines de calabaza y curry que había hecho en el invierno, cuando empecé con el blog. La ricota le da una suavidad increíble a la masa y la hace muy tierna.

Do you have a favourite cheesecake? Last week, after buying some beautiful blueberries, I found myself in the search of the ideal cheesecake, since I wanted to use them as a topping with one of the most delicious bought marmalades I have ever tried.
I searched through my cook-books, but I found I would be serving AGAIN the same old cookie processed-crust and cream-cheese cake I always do, that is indeed a delicious cake, but above everything, a safe recipe.

¿Tienen ustedes una receta favorita de cheesecake? La semana pasada, luego de comprar unos muy lindos arándanos, me encontré en la búsqueda del cheesecake ideal, porque quería usar los arándanos como cubierta de la torta junto a una de las más deliciosas mermeladas compradas que jamás haya probado.
Busqué en mis libros de cocina, pero encontré que estaría sirviendo DE NUEVO la misma vieja conocida, de masa de galletitas molidas y relleno de queso crema que siempre hago, que realmente es una torta deliciosa, pero sobre todo, una receta segura.

























So I turned to the blogs for some help and inspiration and after some reading, I came out with this unique combination. I remembered a genius recipe from Paula's (an amazingly talented, well respected and highly reputed lady foodblogger I had the good fortune to meet on the web) blog in English. She had done some rolls (Caramel Graham Cracker Almond Raspberry Cinnamon Skillet Rolls) which I tried at home, but with some apples I had, since I could not find raspberries at the time, and everybody in the family was anxious and drooling over the recipe.
The great part of the recipe is that she used the Graham Crackers dough as such. I adopted this dough ever since! Thanks Paula!
For the filling I adapted a recipe I liked from the blog Nordljus, mainly because it combined ricotta cheese and traditional cream cheese.

Entonces me volqué a los blogs por ayuda e inspiración, y después de un poco de lectura se me ocurrió esta combinación única. Me acordé de una receta genial del blog en inglés de Paula (una increíblemente talentosa foodblogger, muy respetada y de gran reputación, que tuve la buena fortuna de conocer en la web). Ella había hecho unos rolls (Caramel Graham Cracker Almond Raspberry Cinnamon Skillet Rolls) que probé hacer en casa, pero con manzanas, porque en el momento no encontré frambuesas y mi familia estaba ansiosa y babeando por la receta.
La parte genial de la receta es que usa la masa de galletitas Graham como masa. ¡Desde entonces la adopté! ¡Gracias Paula!
Para el relleno adapté una receta del blog Nordljus, mayormente porque combina la ricota con el queso crema tradicional.
















My daughter liked the filling so much, we made some baked blueberry ricotta puddings also, adding some flour and blueberries to the mixture and topping them with the marmalade glaze.
When we finally sat down to have our tea, we discovered the unique taste of the spicy pastry combined with the very creamy filling, contrasting the freshness of the fruit. A cheesecake to become our favourite, don't you think so? There were the puddings, of course, for those who wanted extra filling. This way, we spent a delightful afternoon...and everyone,  happy.

A mi hija le gustó tanto el relleno, que hicimos unos puddings de ricota horneada con arándanos, añadiendo a la mezcla del relleno un poco de harina y arándanos y para la cubierta, glaceándolos con la mermelada.
Cuando finalmente nos sentamos a la mesa del té, descubrimos el sabor único de la masa especiada combinado con el relleno tan cremoso, contrastando con las frutas tan frescas. Un cheesecake para convertirlo en favorito, ¿no lo creen? También estaban los puddings, por supuesto, para los que querían relleno extra y así, pasamos una deleitosa tarde...y todo el mundo, feliz.

Not everything is so sweet. Or pleasant. Just as I told you last week about all the good things I found on GOOGLE+, I also ran into some unscrupulous administrator account on FACEBOOK. I had found a page of Argentina through a friend, where they promote new chefs who organize meals in their homes. Through the site you meet the cook and book your place. So far so good. The downside is that to promote this ( which also has a dark legal side because they perform a public activity in private places and do not pay any taxes or have the corresponding permissions) they used (note the verb tense) photos of well known international foodblogs and credited recipes and photos as their own, editing their name on photos. In a comment I complained, asking them to be fair and show the credits. If there's anything I learned with my blog is that the most appreciated foodbloggers are those who show an honest attitude towards other foodbloggers in the communities. In a world where sometimes everything is not so fair, finding a virtual paradise, where people appreciate and value the work of others, is one of the things that make me happy  about having  started  this blog.

No todo es tan dulce. Ni tan agradable. Así como les conté la semana pasada sobre todo lo bueno que encontré en GOOGLE+, también me topé con algún administrador de cuenta inescrupuloso en FACEBOOK. Había encontrado una página de Argentina a través de una amiga, donde promocionan chefs nuevos que organizan comidas en sus casas. A través del sitio se conoce al chef y se concreta la reserva. Hasta allí todo bien. Lo malo es que para promocionar todo esto (que también tiene un costado legal turbio porque realizan una actividad pública en lugares privados y no pagan ningún impuesto ni tienen los permisos para ejercer el oficio, ni las habilitaciones correspondientes) utilizaban (noten el tiempo de verbo) fotos de foodblogs internacionales muy conocidos y acreditaban como propias las recetas y las fotos, editando el nombre de ellos sobre las fotos. En un comentario me quejé, pidiéndoles que pusieran los créditos y que fueran honestos. Si hay algo que aprendí con mi blog es que los foodbloggers más apreciados son aquellos que muestran una actitud honesta con los demás foodbloggers en las comunidades. En un mundo donde a veces todo no es tan limpio, encontrar un paraíso virtual, donde la gente aprecia y valora el trabajo del otro, es una de las cosas que más me alegran de haber iniciado este blog.





















The story ended in a simple manner. Several people commented that I was right, some of them (also foodbloggers) said they had already complained, but that the manager had not attended their claims. It created a somewhat tense situation. So I decided to do something about it. I wrote a message via inbox to one of the most affected pages and warned them about the misuse of their material. The next day I checked the page in question and all the material had been removed. It did not look so attractive but at least, it looked more real. I think we all somehow inspire ourselves in other people, but to take ownership of intellectual property is something else.
Today I leave you with something that tastes the way I think things should be: authentic, with character and personality. I see cauliflower that way. It is one of those vegetables you either like or not. It is accompanied by a dip reminiscent of the Middle East with Greek yoghurt... to soften so much personality!

La historia terminó de manera sencilla. Varias personas comentaron que yo tenía razón, algunas de ellas (también foodbloggers) dijeron que ya se habían quejado pero que el administrador no había atendido sus reclamos. Se creó una situación un tanto tensa. Y decidí hacer algo. Escribí un mensaje por inbox a una de las páginas más afectadas y les advertí del uso indebido de su material. Al día siguiente volví a la página en cuestión y todo el material estaba retirado. Ya no se veía tan atractiva pero, por lo menos, era más real. Creo que todos nos inspiramos en alguien más, pero adueñarnos de su propiedad intelectual es otra cosa.
Hoy les dejo algo cuyo sabor es como creo que deberían ser las cosas: auténtico, con carácter y personal. Así es para mi el coliflor. Es uno de esos vegetales que te gustan o no. Está acompañado por un dip con reminiscencias de Medio Oriente que lleva yoghurt griego... para suavizar tanta personalidad!

It has been a while since the last post. I have been very busy with several issues and I really had no time to have a quiet moment to sit down and write. I know that during these past three months, since I started the blog, I went through similar situations, but somehow I had the energy to stay awake a bit longer and finish whatever I wanted to share with you.  Nevertheless I have been reading a lot of recipes and whenever I could, I also baked a few. Probably I needed these three weeks to take this break in order to search for new things. And I found a few very interesting sites that inspired me and would like to share them with you.

Pasó un tiempo desde mi último post. Estuve bastante ocupada con distintos temas y realmente no tuve el tiempo físico para sentarme a escribir. Sé que desde que empecé el blog, hace tres meses, pasé por situaciones similares pero de alguna manera tuve la energía como para quedarme despierta un rato más y terminar aquello que quería compartir con ustedes en ese momento. A pesar de esto, estuve leyendo muchas recetas y cuando pude, cociné varias. Probablemente necesité estas tres semanas de recreo para encontrar cosas nuevas. Y de hecho encontré algunos sitios muy interesantes que quisiera compartir con ustedes.

A new activity I started was getting to know other foodbloggers through Google+. This would have been the obvious thing to do from the beginning, since I use BLOGGER as a platform for my blog, but it took me two  and a half months to realize about it! This is all so new to me. Not even the obvious looks familiar. Yet, I admit that I am not ashamed at my lack of knowledge, because I know that by the time I become an experimented blogger these anecdotes will make me laugh hard!

Una actividad nueva que empecé fue conocer a otros foodbloggers a través de Google+. Era lo que obviamente cualquiera que comienza un blog desde BLOGGER hubiera hecho pero yo tardé dos meses y medio en darme cuenta! Esto es todo tan nuevo para mí. Ni siquiera lo obvio me resulta conocido. Pero admito que no me avergüenzo de mi ingenuidad porque sé que cuando sea una blogera experimentada estas anécdotas van a hacerme reir mucho!

One of the things I want to do is share with you some of the beautiful blogs I have found and how I adapted to my family's taste some of the recipes I baked from them, but for now I will leave this chocolate and pistacchio cake recipe with you. 
Yesterday at night, after I came home from a visit to the hospital, where a friend of mine is taking care of her father, who is not doing well at all, I felt the need of baking something deeply comforting and simple, just as I like cakes. A few days ago, after reading several recipes and going through  ingredients I like so much, such as honey, almond meal and pistacchio, I came up with a recipe of my own  and yesterday I thought, was the right time to try it and it came out beautifully. Baking is not only comforting, but healing. It really does every sort of good.

Una de las cosas que quiero hacer es compartir con ustedes algunos de los hermosos blogs que encontré y cómo adapté al gusto de mi familia algunas de las recetas en ellos, que cociné. Pero por ahora les voy a dejar esta torta de chocolate y pistacho.
Ayer por la noche, cuando volví de una visita al hospital, donde una amiga tiene internado a su padre que está bastante enfermo, sentí la necesidad de hornear algo profundamente reconfortante y simple. Tal como a a mí gustan las tortas. Hace unos días, después de leer varias recetas y revisar ingredientes que me gustan mucho como la miel, la harina de almendra y los pistachos, generé esta receta mía y ayer fue el momento indicado para probarla y salió muy buena. Cocinar no solo es reconfortante, también sana. Realmente hace toda clase de bien.

The recipe is mine and I hope you try it. It is quick, simple and very tender. I dusted it with some icing sugar to have it for breakfast or with a cup of coffee, but it can easily turn into dessert with some whipped cream on top and some fresh strawberries, that are so good these days in the market.


Fue el perfecto fin de semana. La indecisión del clima de la semana afectó mi ánimo y hornée todas las peras y las manzanas que quedaban del invierno, que se fue recientemente y por un momento pensé que debería retardar el buen tiempo en mi cocina. Pero amanecí el sábado y el día me sorprendió con mucho sol, una brisa fresca de primavera y mucha energía para combinar en esta torta sencilla, la frescura del limón y la suavidad cremosa de la ricota.
 La receta es mía y espero que la prueben. Es rápida, simple y muy tierna. La espolvoreé con azúcar impalpable para comer en el desayuno o para acompañar con un café, pero también se puede convertir en un rico postre con crema batida y frutillas de estación, que están tan buenas por estos días en el mercado.















To make lemon ricotta mix the lemon zest with the cheese and add to the batter.

Para la ricota al limón se mezcla la ralladura con el queso y se añade a la mezcla de la torta.


The lemon juice has to be added little by little and the beating must be thorough but gentle.

El jugo de limón se añade de a poco y se bate suave pero continuamente.

During the week I went to Tigre ( a neighbourhood beside the River Plate´s Delta), because I needed some pecan nuts, a regional product of the place. I could actually get them in a specialized food supply shop, but I really enjoy buying them directly from the producers. They sell them with their shell or without it and you can tell they are really fresh.
I had done a recipe with pecans for some muffins I posted in the FOOD52 blog, where I am actively participating, and I had about a cup left over. I started looking for a good recipe to use them and found this tart that can make a great dessert served with some vanilla ice-cream or some raspberries and whipped cream.

En la semana estuve por el centro de Tigre porque necesitaba conseguir nueces pecan, que son regionales del Delta. Puedo conseguirlas en las dietéticas pero disfruto mucho más comprándolas directo de sus productores. Hay peladas y con cáscara y uno sabe que son frescas.
Hice una receta de muffins para el blog FOOD52, en el que participo activamente, y me sobró algo así como una taza. Me puse a buscar una buena receta para usarlas y encontré esta tarta que puede ser utilizada como postre si se la acompaña con helado de vainilla o con frambuesas y crema batida.




On my way back, I took some pictures of azaleas (rhododendron) that are blooming everywhere, in all their colours and varieties. I love these flowers!

Cuando volvía tomé algunas fotos de las azaleas (rhododendron) que están floreciendo por todas partes, en todos sus colores y variedades. ¡Estas flores me encantan!

Spring is here! Many of us wait anxiously for this season to start because with it comes the promise of longer and warmer days and a wide variety of delicious natural products.

Almond is my favourite nut. Sometimes I wonder if it has to do with my Armenian descent. It is told that the edible almond (the wild variety is poisonous) comes from the Middle East, specifically a region between Armenia and Azerbaijan. Anyway, this valued fruit is very versatile as an ingredient in the kitchen.
The edible type of almond derives from the prunus amygdalus or prunus dulcis, one of the first domesticated fruit trees in the ancient Middle East. It is common to the Armenian, Arab and Jewish culture. It can be found in numerous passages of the Old Testament in the Bible, as a symbol of watchfulness and promise, probably due to its early flowering. It is told that the rod of Aaron, brother of Moses, was an almond rod that blossomed with bitter or sweet almonds, according to the behaviour of the Jewish people.

La almendra es mi fruto seco preferido. A veces me pregunto si no será por mi origen armenio. Según se cuenta, la almendra comestible (la salvaje es venenosa) proviene de Medio Oriente, específicamente de una zona entre Armenia y Azerbaijan. Cualquiera sea el caso, este fruto tan apreciado es muy versátil a la hora de ser un ingrediente en la cocina.
La variedad de almendra comestible es el fruto del prunus amygdalus o prunus dulcis, uno de los primeros árboles de frutos domesticados en el antiguo Medio Oriente. Es común a la cultura armenia, árabe y judía.
En relatos del Antiguo Testamento de la Biblia podemos encontrarla en numerosos pasajes, como símbolo de vigilancia y promesa, probablemente por su florecimiento anticipado, como lo era la vara de Aarón, el hermano de Moisés, cuya vara de almendro florecía con almendras amargas o dulces de acuerdo al comportamiento del pueblo judío.







From a nutritional standpoint the almond has countless qualities. Most of the vitamin B complex, a significant amount of vitamin E and minerals such as zinc, iron, calcium, magnesium, phosphorus and potassium. Nevertheless it is very rich in calories. Its energy value is approximately 576cal per 100gr. It is eaten as a fruit and also processed as flour (almond meal), oil, milk or paste and its uses in cooking are varied.

Desde el punto de vista de la nutrición la almendra posee innumerables cualidades. Casi todo el complejo de vitamina B, una importante cantidad de vitamina E y minerales como el zinc, hierro, calcio, magnesio, fósforo y potasio. No obstante, cabe destacar que tiene muchas calorías. Su valor energético aproximado es de 576 cal. cada 100 gr. Se come como fruto y se puede procesar en harina, aceite, leche o pasta y sus usos en la cocina son muy variados.

What a week! My school celebrated its 175th aniversary, Jewish people celebrated the Hebrew New Year... and "Secretary s Day" was on the 4th of  September in the country.
I spent part of the week reading about Jewish cuisine and I thought this popular recipe would be just right for the week-end. It can be made in advance and eaten anytime. It is an excellent snack.
So lets leave a tray full of them and take a break from the kitchen during the week-end!

¡Qué semana! El colegio en el que estudié cumplió 175 años, el pueblo hebreo cambió de año... y hasta fue el Día de la Secretaria en el país (04 de septiembre).
Parte de la semana estuve leyendo bastante sobre la cocina tradicional judía y esta receta popular me pareció ideal para el fin de semana. Se hace con anticipación y se puede comer en cualquier momento. Es un excelente snack. Así que, dejemos una bandeja llena con estas delicias y... ¡Tomémonos un descanso de la cocina por el fin de semana!

The knish is an appetizer from Eastern Europe, very popular among the Jewish communities.
A filling is rolled into a very thin dough that can be baked in the oven or fried.
The typical filling is done with potatoes and fried onions, although it is also very popular to make them with spinach. This time I added a good tablespoon of honey to the onions and caramelized them.

El knish es un aperitivo del este de Europa muy popular entre las comunidades judías. Consiste en un relleno cubierto de una masa muy fina que puede ser cocinada en el horno o frita.
El relleno típico es con papa y cebolla frita, aunque es muy popular también el de espinacas. En esta receta añadí una buena cucharada de miel a las cebollas y las caramelizé.

There is a green wave in my kitchen. It is as if  I wanted to retain all the green of the season in my dishes. I already cooked spinach and zucchinis, though these last are out of season but still, deeply green. I steamed tons of brussels sprouts and chard, though not for the blog and yet so green, too. I grilled cauliflower, though not green and yet so yummy with turkish spice "sumac". It is now mr. broccolis time to perform, and I will love to see it crunchy and tasty, wrapped in a pastry I adapted for this recipe, with walnuts and a creamy and soft good old bechamel sauce.

Hay una onda verde en mi cocina. Como si quisiera retener todo el verde de la estación en mis platos. Ya hice espinacas y zucchinis, aunque estos últimos no son de estación, pero son bien verdes. Cociné al vapor toneladas de repollitos de bruselas y de acelga, aunque no para el blog, y aún así tan verdes. Grillé coliflor con sumac (una especia turca), que no son verdes, ¡pero son tan ricos! Ahora le toca actuar al Sr Brócoli  y voy a presentarlo muy crujiente envuelto en una masa que adapté para esta ocasión acompañado por nueces y la cremosa y suave salsa bechamel de siempre.


Broccoli  (brassica oleracea italica) is from the sprouts family, and it grows well with low temperatures. Cabbages, brussels sprouts, cauliflower (very similar to it except for its colour) are from the same vegetable kind. It is a very important source of vitamins  C and E and soluble food fiber. The fleshy floral heads are mostly used, arranged in the manner of a tree rising from a stem that is also edible. The best way of cooking it is by steaming or grilling so that none of its fabulous nutrients may be lost in the process.

El brócoli (brassica oleracea italica) es de la familia de las coles y su cultivo funciona muy bien con poca temperatura. El repollo, los repollitos de bruselas, el coliflor (al que se asemeja idénticamente salvo por el color) son del mismo tipo de verduras . Es una fuente importante de vitamina C y E y fibra alimentaria soluble. Se utilizan mayormente las cabezas carnosas florales, dispuestas en forma de árbol que nacen de un tallo también comestible. La mejor cocción se realiza al vapor o grillada para no restarle ninguno de sus fabulosos nutrientes.



A "galette" is a French cuisine term to designate a crusty, round and flat type of cake from the northwestern region of Brittany. It is filled mainly with salty ingredients, but it is also baked as a sweet treat.

Una "galette" es una especialidad gastronómica de Francia de la región noroeste de Bretania. Se trata de una masa rústica, redonda  y chata que se rellena mayormente con ingredientes salados, pero también se hornean dulces.

It is still cold, yet we know spring will start showing its first signs anytime. For this reason, these following weeks we shall be seizing winters last goods. The bright Sunday afternoon turned out as the ideal time for this delicate and nutritious apple pie, that beside a warm cup of tea, joined me while I finished the last details of the recipe for a very inventive contest I entered during the week-end. Enjoy yourselves, while I go on cooking, taking pictures and filling up forms...
There is a deadline!

Sigue haciendo mucho frío pero sabemos que en cualquier momento los primeros signos de la primavera van a empezar a aparecer. Por esta razón, estas próximas semanas vamos a aprovechar lo bueno del invierno. La tarde luminosa del domingo se convirtió en el momento ideal para esta delicada y nutritiva tarta de manzanas, que junto a una taza de té caliente, me acompañó mientras terminaba de ajustar los últimos detalles de mi receta para un concurso muy original en el que me acabo de inscribir el fin de semana. Así que, disfruten, mientras yo sigo cocinando, sacando fotos y llenando los formularios...

Amaranth is a perennial plant with edible leaves and seeds, though it is also used in an ornamental manner. Its name derives from the Greek amarantus, meaning "unfading". In ancient Greece the purple and red flowers were offered to Ephesian Artemis. They were supposed to have healing properties and were held as a symbol of immortality. It was known in the past not only by the Greeks. Aztecs in America and many other cultures in Asia and Africa made use of it. 
Nowadays it is recognized by its high nutritious value, and together with quinoa it is a "pseudograin"  highly used in recipes and considered as "the crop of the future".
The grain is very small, like that of the poppy seed, but harder. To become edible it must be cooked or , as I did for this pie, it must be toasted in a pan, so that the seeds may open up like popcorn.


El amaranto es una herbácea perenne cuyas hojas y semillas tienen uso culinario, aunque la planta también se usa de manera ornamental.  Su nombre deriva del griego amarantus, "que no se marchita". En la Grecia antigua las flores púrpuras y rojas se ofrecían a la diosa Artemisa de Efeso. Se suponía que la planta poseía propiedades curativas y se la consideraba como símbolo de la inmortalidad. No solo en Grecia antigua sino también en América, entre los Aztecas y pueblos de Asia y África se encuentra en uso desde el pasado.
Hoy en día se reconoce por su alto valor nutritivo y junto a la quinoa es un "pseudograno" muy utilizado en recetas y considerado como el "alimento del futuro". 
El grano es muy pequeño, como el de la amapola, pero más duro. Para poder comerlo hay que cocinarlo o como hice para esta tarta, colocarlo en una sarten tapada al fuego para que los granos se abran como el pochoclo.

How many times do we have to wait just a little while before we serve food, when we invite our friends to have dinner at home? It is the ideal time for pouring out drinks, chat about the latest news and offer a tempting appetizer before we start the proper meal.
As an ideal starter before an informal dinner or appetizer before some good home-made pizzas, this quick, easy-to- make recipe will raise more than one praise.

¿Cuantas veces hay que esperar un ratito hasta que la cena esté totalmente lista cuando invitamos amigos a comer a casa? Es el momento ideal para servir bebidas, ponernos al día con las últimas novedades y ofrecer algo tentador para disfrutar juntos antes de empezar a cenar.
Ideal para una cena informal, o como aperitivo antes de unas buenas pizzas caseras esta receta super fácil y rápida se va a llevar más de una ovación.



This simple recipe has a few but noble ingredients. It is true that sometimes working with fresh yeast may seem a bit scary,  but the method used ensures a good result. My favourite pizza recipe has active dry yeast in it, but for this bread we will have to risk working with the "real"  stuff.
The other ingredient that gives the recipe a distinct flavour is oregano (origanum vulgare), a perennial herb often used in Mediterranean cuisine for its leaves (dry or fresh). The name is from Cyprus and ancient Greeks and Romans considered it as a symbol of happiness (so "Bonheurcuisine"!). We shall be using both in this recipe. It is good to have a small plant at home and if  you would like to try it,  you must know it  requires a lot of watering and plenty of sun.

Esta receta sencilla tiene unos pocos, pero nobles ingredientes. Es cierto que a veces asusta un poco trabajar la levadura fresca, pero el método aplicado nos va a asegurar un buen resultado. Mi receta favorita para hacer pizza es con levadura seca, pero para este pan hay que aventurarse a usar la tradicional.
 El otro ingrediente que le da un sabor inequívoco es el orégano (origanum vulgare), una herbácea perenne cuyas hojas son muy utilizada en la cocina mediterránea como condimento (secas o frescas). El nombre es originario de Chipre y los antiguos griegos y romanos lo consideraban un símbolo de la felicidad (tan ¡"Bonheurcuisine"!).  En esta receta vamos a usar las dos versiones. Tener una plantita en casa siempre viene bien, y si quieren intentarlo, para cuidarla tienen que saber que hay que regarla bastante y que necesita mucho sol.

This long week-end was an ideal time to get some rest at home. My son went to the sea-side with his father, planning to do some "boys stuff " and I stayed with my daughter to enjoy the quietness of the house.
 When we are by ourselves we tend to relax and are less formal with our meals. Even so, I asked her as usual what would she like for lunch. Surprisingly, this time she asked for a chicken curry. I had not done it for a while and it is always great  with pilaf rice as a side. But I had no chicken at home, and not because I had forgotten to buy. Lately,  I tend to cook less meat for them. I cook meat or chicken three times a week. I  give them fish a couple of times a week, too. And I try to buy fresh products from small farms. But I seldom eat any. I prefer vegetable sides or pies and  good salads.
This made me think a little about my own eating habits. I see there are quite a lot of people that claim to be vegetarian and are against animal slaughter, and I consider this a very worthy attitude. I believe many do it out of conviction but some others just follow the trend.
In general, what we eat is a consequence of our surrounding culture, which explains our eating habits, but lately, it is also a consequence of  the food industry and marketing. If we take a look at the way animals are bred, at the agro-chemicals being used, and the refined products full of man-made substances with no nutritious value we shall realize that  we are eating a  bit worse every day.
Maybe I have internalized all this and unconsciously...I am turning into a veggie!! Did it ever happen to you?
Anyway, I still had to prepare "something" with curry to satisfy my daughter's request, when I came across this delicious "tartines" recipe, that was a real source of inspiration.


Este fin de semana largo fue un buen momento para descansar y estar en casa. Mi hijo se fue con su padre a la costa los tres días en plan de hacer "cosas de varones", y yo me quedé con mi hija a disfrutar de la tranquilidad doméstica. Cuando estamos las dos solas nos relajamos un poco en cuanto a la comida y somos menos formales. Igualmente siempre le hago la pregunta de rigor... "¿qué te gustaría almorzar?"  Sorpresivamente, esta vez, me pidió un curry de pollo. Hace tiempo que no lo hacía y con arroz pilaf queda espectacular. Pero no tenía pollo y no porque me hubiera olvidado de comprar. Últimamente les doy carne en forma moderada: sólo tres veces por semana algún plato con carne o pollo. También les hago un par de veces pescado. Y trato de comprar todos los productos frescos, de granja. Pero yo casi nunca los como. Prefiero los acompañamientos con verduras o las tartas y buenas ensaladas. 
Esto me hizo pensar un poco en mis propios hábitos. Veo que hay mucha gente que declama ser vegetariana y alza banderas en pro de no matar animales y considero esto una actitud muy loable. Creo que muchos lo hacen por convicción, pero algunos otros tantos por moda. 
En general lo que comemos es una consecuencia de nuestra cultura; lo que explica muchas tendencias alimentarias y últimamente, una consecuencia de la industria alimenticia y la propaganda. Y esto hace que cada vez comamos peor, si observamos la forma en que se crían los animales para consumo, los agro-químicos, los alimentos refinados y elaborados llenos de sustancias sintéticas y sin valor nutritivo. Tal vez haya interiorizado todo esto e inconscientemente... ¡me esté volviendo vegetariana! ¿Les pasó esto a alguno de ustedes? 
De cualquier manera, todavía tenía que satisfacer el pedido de mi hija de comer "algo" con curry, cuando encontré en esta receta  deliciosa de "tartines" una verdadera fuente de inspiración.






Curry is a mix of spices originally used in India to highten sauces in different types of stews or casseroles. It was introduced in Europe around the eighteenth century by Britain and the Netherlands, from the colonies both countries had in the far East.
These delicate "tartines" have a perfect combination of taste and texture: the sweetness and softness of the butternut squash against the character of the onions and garlic hightened by the distinct intensity of  the curry. All of this poured over a variation of the traditional shortcrust pie.

El curry es una mezcla de especias que se utiliza en la India para realzar salsas de diferentes platos de guisos o estofados, traída a Europa alrededor del siglo XVIII por el Reino Unido y Holanda, desde sus colonias en Oriente.
Estas delicadas "tartines" tienen una combinación de sabores y texturas perfectas: la dulzura y suavidad de la calabaza  contrasta con el carácter de las cebollas y ajos acentuado por la intensidad inconfundible del curry. Todo esto volcado sobre una variación de masa "quebrada" tradicional.

Close family and dear friends have their birthdays in August. My mother celebrated hers this week and I felt very blessed about it. A good cake for this kind of occasion is very important. I want to share an ideal cake recipe for this type of events.

Agosto es para mí, un mes en el que cumplen años familiares cercanos y amigas muy queridas. Mi madre cumplió años esta semana y me sentí muy bendecida por poder festejar su cumpleaños. Es muy importante elegir una buena torta para estas ocasiones especiales. Quiero compartir una receta de torta ideal para este tipo de celebraciones.




















A genoise is an Italian sponge cake from Geneva ( mostly used in French patisserie) It is a cake with whole eggs, sugar and plain flour that obtains its volume through the air suspended in the batter through mixing, instead of using leavenings. It is cut into layers or baked layer by layer , filled and decorated. I chose a mix similar to a pavlova (traditionally baked meringue, whipped cream and berries) only this time, due to the season, I changed the berries for "dulce de leche", an Argentine jam made out of milk, that tastes like toffee. I covered it with abundant Italian meringue. Lets celebrate!

El genoise es una masa esponjosa de origen genovés (usada mayormente en la repostería francesa) hecha con huevos, azúcar y harina común, donde lo importante es que la masa obtenga su volumen a través del aire. Para lograr esto, en vez de usar leudantes se incorpora aire en la masa por medio del batido . Se corta en capas o se hace por capa y se rellena y decora a gusto. Elegí una preparación similar a una pavlova (tradicionalmente merengue cocido, crema montada y frutos rojos) pero esta vez, por estacionalidad, cambiando los frutos rojos por un buen dulce de leche repostero. La terminé con un abundante merengue italiano. ¡Celebremos!

Aproveché la mañana del sábado para ir al mercado. Todavía no había gente por ser muy temprano. Estaba todo recién puesto, fresco, ordenado, como me gusta a mí. Y la paz de ver y elegir sin distracciones alrededor.
Durante la semana había encontrado las berenjenas que buscaba para esa tan famosa receta armenia que quería presentarles, pero así como llegaron nos tentamos y las preparé para mi hija y para mí, que somos adictas a esa maravilla púrpura, y sin poder sacar una sola foto...¡desaparecieron! (Hablando de fotos, prometo mejorarlas, y debo, si quiero seguir en esto. Pero parece que no estoy sola en esta tarea, según pude saber por medio de una blogera inglesa que me contactó. Es lo que en este oficio le saca el sueño a más de uno. Sí, oficio, aunque no parezca, o yo no me haya dado cuenta antes de embarcarme en tener este blog. Esto de postear lleva su tarea....pero  ¡es tan bueno cuando finalmente sale!)
Es paradójico, pero en la estación más fría, cuando no hay ni una hoja en los árboles y todo está gris; cuando el pasto se pone marrón después de la helada y el paisaje completo empalidece, encontramos las verduras de hoja más verdes: acelgas y espinacas están en su mejor momento. Como un presagio de cambio, augurando su retirada y la llegada de una estación más benévola, con todo el colorido primaveral de las hortalizas y frutas. Como si en las hojas verdes la naturaleza nos hiciera una promesa de esperanza. Y si hay esperanza hay expectativa, y si hay expectativa, como mínimo hay posibilidad, una chance de cambio. Como en la vida misma. Tal vez como me siento hoy. Eso hace ver las cosas mejor. O a sentirlas mejor. La promesa en el verde de estas hojas.
Me decidí por las espinacas, crocantes y tiernas, y como no puedo con el genio, también traje un brócoli perfecto para otro post.


Spanakopita (Tarta de espinacas griega)

En griego, tarta de espinacas. Tradicionalmente se hace con espinacas, cebolla o echalotes, queso feta y huevo; con masa phillo, finita, crocante, deliciosa. A mi abuela, la que vino de Grecia, le gustaba ponerle pasas de uva morenas y piñones. Y semillas de amapola sobre la cubierta.
La masa phillo perfecta se puede comprar, o se puede hacer una versión casera, que lleva un poco de tiempo y dedicación, pero que si uno está con ganas, vale la pena. También sirve la masa de hojaldre comprada, pero la hace parecer más a una "pascualina",  o pueden practicar la masa de la tarta de zucchinis, que es casera y  muy buena para esta preparación ....y da menos trabajo. La receta debajo es con masa phillo casera, pero el relleno va bien con cualquiera de las masas mencionadas



RECETA
Porciones 15 rectángulos (fuente 20cm  x 30cm)

Ingredientes
Para la masa phillo casera:
600gr harina común 0000
200 ml aceite de oliva
200 ml agua

Para el armado de la masa:
200ml de ghee  (manteca clarificada)

Para el relleno:
1 1/2 cebolla picada finamente
1 diente de ajo picado, desvenado
800 gr espinaca fresca
2 huevos
1 1/2 cucharadas sopera de crema de leche
2 cucharadas soperas de queso parmesano rallado
2 cucharadas soperas de aceite de oliva
1 cucharadita de té de azúcar
1 cucharadita de té de comino molido
1/2 cucharadita de té de nuez moscada rallada
2 cucharadas soperas de pasas de uva morenas
2 cucharadas soperas de piñones
sal/ pimienta negra molida a gusto
1 cucharada sopera de semillas de amapola para decorar



Instrucciones

Masa:
  1.  Poner en un bols los 600 gr de harina común 0000
  2. Hacer un hueco en el  centro de la harina y verter los 200 ml  de aceite y los 200 ml agua
  3. Con la mano desde el centro hacia afuera trabajar la masa en círculos y juntar todos los ingredientes amasando hasta lograr un bollo homogéneo. Notarán que el bols queda limpio y el bollo perfecto 
  4. Tapar la masa con un lienzo limpio y llevar aproximadamente veinte minutos a la heladera




Relleno:
  1. Lavar la espinaca debajo del chorro de agua para quitar toda la posible suciedad y secar
  2. Cortar los cabos
  3. Blanquear la espinaca de la siguiente manera: en una cacerola hervir agua y apagar el fuego. Sumergir las espinacas y retirar con espumadera, volocándolas en un colador para drenar el agua. Una vez tibias, escurrir 
  4. Pelar 1 1/2 cebolla y picar finamente
  5. Quitar la piel de 1 diente de ajo, cortarlo a la mitad, sacar la vena (color verde) y picar finamente
  6. En una cacerola colocar las dos cucharadas de aceite de oliva y calentar. Echar las cebollas y el ajo picados, añadir la cucharadita de té de azúcar y rehogarlos con espumadera de madera hasta que queden transparentes.
  7. Incorporar las espinacas escurridas y cortadas y mezclar, cocinando apenas.  
  8. Añadir la sal y moler la pimienta a gusto
  9. Añadir las especias ( nuez moscada rallada, comino molido), las pasas morenas y los piñones.
  10. Mezclar bien y retirar del fuego
  11. En un bols grande colocar la preparación de las espinacas y una vez tibio, añadir los 2 huevos, la 1 1/2 cucharadas sopera de crema de leche y las 2 cucharadas de queso parmesano rallado y mezclar hasta incorporar todos los ingredientes 

Armado:

  1. Sacar de la heladera la masa y sobre  la mesada enharinada cortar en 9 (nueve) porciones, sólo una de ellas apenas más grande
  2. Enmantecar una asadera de 20cm por 30cm 
  3. Comenzar a estirar la masa con la ayuda de un palote hasta que quede lo más finita posible. Si la mesada es de granito o mármol, la masa debería quedar translúcida, casi viéndose la mesada a través de ella
  4. Cortar en rectángulo la primera capa, que será el fondo de la preparación, de modo que sobresalga la masa por los bordes
  5. Pintar con ghee o manteca clarificada. El éxito de la masa depende de la cantidad de ghee utilizado entre capas. A más ghee mejor queda la masa. Con 200 ml se logra una masa razonable, sin abusar de la manteca, pero si se desea se puede utilizar más cantidad
  6. Cortar las 4 próximas capas, estiradas del mismo modo que la primera,  del tamaño de la asadera (20 x 30)
  7. Intercalar capas de masa y ghee hasta completar las 4 capas
  8. Colocar el relleno, esparciéndolo uniformemente
  9. Intercalar las 4 capas de masa estirada restantes con el ghee, de la misma forma que las anteriores
  10. Tomar el borde inferior con la última capa, cerrando la preparación, a modo de repulgue rústico
  11. Pintar con el ghee restante y espolvorear la cucharada de semillas de amapola por encima
  12. Marcar las porciones con un buen cuchillo
  13. Llevar a un horno precalentado a 180 C, cocinar por 30 a 35 minutos, cuidando que la primer capa de masa no se arrebate.
